Overnight Cook

We are seeking an experienced and dedicated Overnight Cook to join our award-winning culinary team at Crosby Street Hotel, part of the Firmdale Hotels collection. This role is ideal for a passionate chef who thrives in a quiet, focused environment and takes pride in delivering exceptional dishes that meet the highest standards of quality and presentation.

Working through the night, you will oversee the kitchen operation, preparing elegant dishes for room service and Drawing Room guests while also setting up the foundation for the following day’s breakfast service and events. As the leader of the overnight culinary team, you will ensure that every plate leaving the kitchen reflects the hotel’s signature attention to detail and commitment to excellence.

Main Duties

• Oversee and manage all kitchen operations during the overnight shift.
• Prepare and deliver refined dishes for room service and Drawing Room guests, maintaining Firmdale’s elevated culinary standards.
• Demonstrate thorough knowledge of the menu, daily specials, and required ingredients to ensure consistency and excellence.
• Supervise and guide the overnight kitchen team, fostering collaboration, efficiency, and professionalism.
• Ensure all orders are prepared and delivered promptly and accurately.
• Maintain the highest standards of health, safety, and food hygiene throughout the shift.
• Conduct nightly mise en place, inventory checks, and stock control to prepare for the next day’s service.
• Support the preparation and organization of breakfast and event items, ensuring a seamless handover to the morning brigade.
• Provide a detailed and accurate handover report for the senior chef on duty the following day.

Requirements

• Previous experience as a Chef de Partie or Line Cook in a five-star hotel or luxury restaurant environment.
• Comprehensive knowledge of local and international cuisine, ingredient sourcing, and food preparation techniques.
• Strong understanding of food allergies and dietary requirements.
• Excellent communication and leadership skills with the ability to motivate and manage a small team.
• Impeccable attention to detail and a genuine passion for delivering outstanding guest experiences.
• Strong organizational skills, resilience, and the ability to perform under minimal supervision.
